How much protein is in a typical protein baked good?

Depends on recipe and serving size, but most fall between 8–15g protein per piece. Check the individual recipe notes for exact macros.

Do I need to adjust oven times when baking with the mix?

Slightly. Protein-based mixes brown faster than wheat flour. Drop oven temperature by about 10°C and check 2–3 minutes earlier than a standard recipe.
