Pancake Tacos - Chocolate & Buttermilk

Pancake Taco Recipe

In case you needed another reason to try pancake tacos, here it is. We whipped up 2 pancake taco variants on a grazing board and it's such a lovely way to feed the family! 

Flavour 1 - Savoury - Buttermilk, Bacon & Eggs

Flavour 2 - Sweet - Chocolate, Blueberries, Banana, Vanilla Yoghurt & Granola (gotta add some crunch)

 

Prep Time - 5 minutes

Cook Time - 10 minutes

Ingredients

  • 1/2 cup of Buttermilk Protein Pancake Mix
  • 1/2 cup of Chocolate Protein Pancake Mix
  • 1 cup of water

Toppings / Fillings

  • 4 strips of streaky bacon

  • 3 large eggs

  • ¼ cup of blueberries

  • ¼ cup of sliced banana

  • ¼ cup of vanilla yoghurt

  • ¼ cup of granola (for a bit of crunch)

  • Maple Syrup

 

Method / Directions

  1. Prepare your cold toppings first. So get your blueberries, banana, yoghurt, granola and maple syrup ready to go.

  2. Add your Chocolate TPP mix to a bowl with water and add your Buttermilk TPP mix to another bowl with water. We want to make them a little thinner than normal so it’s easy to fold & use as a taco.

  3. Mix the dry mix and water until well combined.

  4. Crack your eggs into a bowl and whisk until well combined. Ready for scramblin’!

  5. Prepare 3 pans on medium heat. Pan 1 = Buttermilk pancakes. Pan 2 = Chocolate pancakes. Pan 3 = frying your streaky bacon.

  6. Cook your pancakes and bacon at the same time. You should finish frying your bacon before completing all the pancake cooking so you can then pour your eggs into the pan & begin scrambling!

  7. Time to serve! We put all our ingredients on a grazing plate, just like serving tacos.
